Ingredient
Pempek is a traditional Indonesian food that is popular in Palembang. To make pempek, you will need the following ingredients:
- 500 grams of fish meat (preferably tenggiri fish)
- 300 grams of sago flour
- 2 tablespoons of salt
- 2 tablespoons of sugar
- 2 cloves of garlic, minced
- 2 teaspoons of ground white pepper
- 2 teaspoons of baking powder
- 500 ml of water
- 1 egg
Instructions
1. Clean the fish meat and remove the bones. Grind the fish meat or blend it in a food processor until it becomes a smooth paste.
2. In a mixing bowl, combine the fish paste, sago flour, salt, sugar, garlic, white pepper, and baking powder. Mix well.
3. Gradually add water while stirring the mixture until it becomes a smooth dough.
4. Knead the dough until it becomes elastic and doesn't stick to your hands. Cover the dough and let it rest for 30 minutes.
5. Boil a large pot of water. Meanwhile, shape the dough into small balls or logs.
6. Once the water boils, reduce the heat to medium. Drop the shaped dough into the hot water and let it cook until it floats to the surface.
7. Remove the cooked dough from the water using a slotted spoon. Drain the excess water and let it cool.
8. Beat the egg in a bowl. Dip the cooked dough into the beaten egg and deep fry until golden brown.
9. Drain the excess oil using a paper towel.
10. Serve the pempek with vinegar sauce or sweet and sour sauce.
